Food Find: Easiest Summer Starter
The 4th of July is upon us and finally, it falls on a Friday which means a long weekend! Many of us will be doing some sort of entertaining. We want something fresh, healthy, seasonal and most of all SIMPLE! I am excited to share with you the easiest summer starter ever. You will need only three ingredients: peaches, basil & prosciutto.
I found this ‘recipe’ as a passed hors d’oeuvres last summer at a friend’s wedding outside of Vancouver. I will forever remember the dinner as one of the best I’ve ever had, but this was the only thing I knew I’d be able to duplicate back at home. In Canada, the peaches and basil were local and the prosciutto was straight from the pigs raised on the caterer’s farm. Lucky for us, this ‘recipe’ tastes just as fab with store bought proscuitto. Just make sure the peaches are perfectly ripe and you will have some very happy customers.

Cut peaches into 6 or 8 wedges. Place a basil leaf on one side of the peach wedge and wrap a slice of prosciutto around the wedge. The combination of the sweet peach, herbal basil and salty prosciutto is perfection.
